In the effects list in the rulebook it states:
Chaos: Denotes an effect driven by Chaotic magics. Can only be defended against by abilities or effects that explicitly work against Chaos.
Does this just mean any spell/effect that has the word "chaos" in it? I wanted to confirm that this applies to Dodge or Parry. A strict reading of the rules says "yes", but I think some people instincts might say "no", so I wanted to check.
I am just assuming that things like chaos bolts or skills with the elemental keyword chaos exist.
If an adversary swings a weapon and states "Chaos, Pierce", would the correct interpretation be that this can not be parried?
If a chaos bolt (does this exist, who knows) gets thrown, can it be avoided with Dodge?

Your reading of the rules is correct. If a call or tag comes with the chaos keyword, the only way to resist that using and ability is with an ability that explicitly states it works against chaos.
